Smashing Sweet Chilli Rice and Thai Fish Cakes

Prep time: 20 mins prep, 20 – 40 mins cooking time

Serves: 2

How Much? Delicious Details
4 Asda/Tesco Thai Fishcakes
1 Red bell pepper
1 Green pepper
1 Boil in the bag long grain rice
1/2 White onion
As much as you like Sweet chilli sauce

Making Magic

I know that the fishcakes are shop bought, but this is a quick meal to cook – not to mention delicious AND healthy

  1. Oven bake the fish cakes as directed on the packaging
  2. Chop the peppers and onions
  3. Brown the peppers and onion in a little oil until soft
  4. Add in 4/5 tbps of sweet chilli sauce, enough to cover the veggies
  5. Stir well and simmer on a low heat
  6. Pop the rice into a pan of boiling water and time for 22 minutes (soft but not squidgy!)
  7. Oven bake the fish cakes as directed on the packaging
  8. Drain the rice well when the timer finishes, pour the rice into the pan with the peppers, onions and sweet chilli sauce
  9. Stir the rice well, add in a little more sauce if too dry, but do it to taste rather than drown the veggies

To Serve…

Arrange the rice onto beds on the plate and top with fishcakes. Delicious!
