Magnificent Mozzarella Sticks

I absolutely love mozzarella dippers, and on a whim, I decided to whip some up!! Enjoy!

Ingredients! You'll need some flour, breadcrumbs, an egg (or two) and some mozzarella cheese. I love this one from Asda as it's not sat in milk, so easily cut

Cut your dippers to preferred size and ensure they are dry - so kitchen towels are good here!

In one bowl, add a mugful of flour. In a second, beat your egg(s) with a dash of water. In a third, breadcrumbs! This is your coating

Roll each cheese stick in plain flour, ensuring the entire stick is coated (including the ends)

After each stick is coated, lay in the colander to shake off any excess

Next, dip your flour coated cheese sticks into the egg wash. Make sure you cover all sides including the ends

Roll each stick of cheese into the breadcrumbs one at a time. As you go, press the crumbs along the stick until it is coated thoroughly

Once coated, repeat. Dip the sticks into the egg wash, then into the breadcrumbs again. There is no need to re coat in flour. We do this, so that there are no gaps for the cheese to seep through and also it gives the cheese a crunchy coat!

You can use a cast iron skillet, a chip pan or a fryer of your choice. I have none of these things! What I do have, is a saucepan. So I half filled it with Flora oil and put it on a low heat. To test the oil is as hot as it should be, use a frozen chip and if it starts to fry immediately, it's ready

I also have nothing to hold the sticks except a metal potato masher. This turned out to be an excellent tool! I lined three sticks at a time onto the masher and lowered it into the oil

Turn the oil up slightly for the sticks to fry but the masher allowed them an even cook without them exploding in the pan and leaking cheese.

After a minute, lift the cheese sticks up. If they are golden brown, they are ready!
