Cheeky Chicken Pie


Prep time: 30 mins prep, 15-20 mins browning time

Serves: Depends how many you’re cooking for, the below measurements are based on serving two/three people

How Much? Delicious Details
1 Carrot
1 Broccoli floret
1 Cauliflower floret
2/3 (depends on number of diners) Full chicken breasts
6-7 large potatoes Large potatoes
As much as necessary Instant gravy granules

Making Magic

Another simple but amazing recipe. This is actually my own play on Shepherds Pie. All the measurements are of course adjusted

  1. Chop up all your vegetables and give them a good wash
  2. Get the carrots, broccoli and cauliflower onto the hob to boil – cover in a pan with water until soft
  3. Cube the chicken (or if really lazy, buy ready cubed!) and fry gently in a little oil until browned and cooked through
  4. Peel and quarter the potatoes, cover with water in another pan and set on a low heat til soft and ready to mash
  5. Make up the gravy to taste. I like a thicker gravy in this pie but it’s very much based on preference here
  6. Drain the pan of veggies, then add the gravy. All the veggies should look like they’re in a gravy soup and it’s best to stir the gravy into the pan so the veggie soak up the chickeny goodness
  7. When the chicken is ready, add it to the pan of veggies and gravy. Stir gently and keep it on a low heat
  8. Once the potatoes are ready, drain and mash to your taste. Add a little butter if feeling adventurous
  9. Pour out the pan full of chicken, veggies and gravy into a suitable oven dish, of course making sure you have enough room for the potato topping
  10. Evenly top the dish with the potatoes so they cover all the food
  11. Pop into the oven to bake until the topping is slightly browned – nice and crunchy

To Serve…

Big old scoop onto a plate. If feeling REALLY adventurous, sprinkle a little paprika!!
